Mine would be carrots! I absolutely love baby carrots! So I am sure I will enjoy growing carrots. :)

At first, I had wanted to say tomatoes, but then I realized that they aren't vegetables, they're fruits, lol;)
My favorite vegetable to grow are green peas. They're so yummy! I could eat fresh green peas every single day and I wouldn't get bored with them. In my opinion the plant itself looks really pretty, too:)

Well I have two favorite vegetables I like to grow. I like growing broccoli and cabbage in my vegetable garden. I do lots of stir fry dishes with broccoli and cabbage. One of these days, I will attempt to grow red cabbage because it's my favorite type of cabbage.

My favorite vegetable to grow would definitely have to be callaloo and okras; they are just so easy to grow and don't require a lot of attention.

I don't really have a favorite as I enjoy growing virtually all types of vegetables - mainly because I love eating a wide variety of them - but if really pushed to choose just one - then although botanically speaking they are thought of as fruits - it would be Rainbow Peppers - as not only do they add a really attractive look to the vegetable garden - but taste way beyond delicious too :)

I love growing peppers - all kinds. Bell, chili, jalapeno, serrano, etc. They are SO easy to grow and there are so many things you can do with them. My favorite vegetable to eat is cucumber but I've had a lot of problems trying to grow them.

Carrots and green onions for me. They are easy to grow and I know that none of the crop will go to waste as my family will eat all of them. They are very versitile too and can be added to many dishes.

My favorite to grow would be cucumbers and they are wonderful in a salad along with other recipes. With cucumbers you can also make pickles if you want to.

Prettyrose16, I love cucumbers too. They're my second favorite vegetables to grow. I could eat them every day!:) My mother's delicious pickles are one of not so many things that can cheer me up during long winter months:)

Corn..It is a staple food, can be used in many ways, can be canned, dried, frozen, is easy to grow and the stalks and cobs go real good in the compost pile

Corn (almost 1/2 mile if you put all the rows together) and green beans 2 - 150' wide rows in the pic. 90' of wide rows in earlier plantings.

The board in the corn pictures is to show how tall the corn got. The board is 8' long
