I have some mammoth sunflowers I planted and their first mature leaves are yellow why is this.

Where in the US are you? Could be too much water. Or not enough. Hard to tell without more info.

Lower leaves or upper leaves? And where are you? Plant growth is different in a Calif. climate than a New York climate

Sunflowers grow best in locations with full sun. They are remarkably tough and will grow in any kind of soil as long as it is not waterlogged. They do fine in soils that are slightly acidic to somewhat alkaline. Sunflowers need space, trim off, it's yellow leave and don't do watering in excess.
