Still got some Crown Prince squashes from last Autumn - have stored well over winter and now have a sweet and rich flavour. Experimenting with ideas to use them as normally just grill in slices. Grated a piece today and grilled/baked in oven with cheese and a slice of ham on toast - sprinkle of paprika. Yummy!
You can make pies out of it also. Has to be baked soft first , let cool, or bake day before. Find a recipe for sweet potato pie, that will give you the appropriate measurements for the pulp ect. And spices. Me I'd do 2 cups squash, one can evaporated milk, 3 eggs, cup of sugar, vanilla, cinnamon, nutmeg, salt. Pour into a pie pan with crust. Bake one hour at 350

I have some fresh avocados, just soft enough to make an Avocado milkshake later. So yummy, if you have never had it, so good and filling. In one of those bullet blenders, put one avocado, some milk, a teaspoon of vanilla, about a tablespoon of sugar, and a pinch of salt. Blend. pour into a glass. yummy. really.

I ordered dinner through Grubhub last night and it totally hit the spot! I had some spicy pad thai and spring rolls—comfort food level 100. If anyone ever needs help with their order, the grubhub phone number came in handy for me when I had a question. Highly recommend if you're craving something quick and tasty!

Going to save this idea, looking like we'll have 4 or 5 zucchini plants this summer.

another caste iron bake . Chopped kale, scallions, 3 eggs, grated garlic, rice flour, 3 medium size potatoes, about a cup of sharp cheddar cheese grated, salt, pepper. Baked 350 for an hour and 20 minutes, got nice crispy bottom.

I should have gotten pictures of mommas egg rolls the other night. She bought a pack of wrappers, some Asian salad mix and some ground chicken. Mixed with some soy and teriyaki.

Also did Buffalo chicken egg rolls and my favorite breakfast egg rolls. Had some leftover funeral potatoes, mixed in scrambled egg and chopped bacon.

Flash fried to cook the wrappers then we froze them.
