The other morning, roasted Romain with garlic and olive oil on wheat bread toast, with poached eggs.

Made this two different morning. Love it roasted romaine with garlic , olive oil , two poached eggs over homemade wheat toast. Second morning drizzling chili oil on it. View attachment 108151View attachment 108151
Perhaps you had a second helping!

Seems to me you could replace the poached egg with a number of other options if desired. I fancy scrambled egg - lightly browned - with roasted mushroom and tomatoes. Maybe a builders version!

Seems to me you could replace the poached egg with a number of other options if desired. I fancy scrambled egg - lightly browned - with roasted mushroom and tomatoes. Maybe a builders version!
the next day I did an egg omelet stuffed with spinach and cheese . Two days early made a mushroom quiche. The poached eggs on the romaine is a nod to Ceasor salad .
