Made this two different morning. Love it roasted romaine with garlic , olive oil , two poached eggs over homemade wheat toast. Second morning drizzling chili oil on it. View attachment 108151View attachment 108151
Perhaps you had a second helping!

Seems to me you could replace the poached egg with a number of other options if desired. I fancy scrambled egg - lightly browned - with roasted mushroom and tomatoes. Maybe a builders version!

the next day I did an egg omelet stuffed with spinach and cheese . Two days early made a mushroom quiche. The poached eggs on the romaine is a nod to Ceasor salad .

Lately, I’ve really been enjoying discovering light, nutritious foods for my first meal of the day—like boiled eggs, avocado, or steamed veggies with a bit of oil. They’re not only tasty but also a gentle way to wake up the digestive system.

By the way, I’ve been trying out intermittent fasting, and I’ve noticed how important it is to break a fast the right way. I came across this helpful list of foods that work well for that: https://betterme.world/articles/best-foods-to-break-a-fast/ — might be useful for someone else too.

I have fasted a couple of times in my life and always broke fast with an apple, not a lot of nutrition, but a little sugar, and plenty of roughage to get the intestine working again.

I love these. 200 calories each. Discovered on our travels at an inn. I order from Amazon. Easy to pack and travel with. Have with a good cup of coffee about 730am. Then a good protein meal at 10am.

Harvested some leeks and the missus made a lovely leek, cheese and potato pie.
Love putting together a baked vegetable pie. In a bowl, chopped kale, grated one or two potatoes, shredded cheese, grated onion, 3 eggs, some rice flour. Grated one carrots. Mix well . Pour all into my caste iron skillet, bake one hour. It's even good cold. No crust needed.
