Would you eat these potatoes ?

Oh, I would! I buy blue fingerling potatoes at Kroger - $3.99 for a one-pound bag so pricier but I like the taste and get a kick out of eating pink mashed potatoes.
I've also grown "blue" (actually deep purple) carrots, but was sad to see they turned orange when exposed to heat. They were very tasty and sweet, though.

I think they taste about the same - well, a slightly firmer texture, not as crumbly. More like red potatoes than, say, Yukon Golds, in texture.
