My first wife was Japanese, wanted me to try growing some Japanese mushrooms that were very expensive. I looked it up, you start by felling young beech trees, cutting most of the way through well above the ground so they fall still attached and the log is not touching the ground, after a year you clean them up and leave in spring water for a year for anaerobic bacteria to attack them, then you infect them with the mushroom spores. No wonder they are expensive!

I tried Shiitakes which grow on logs but I didn't care for them.

I had a Japanese friend she couldn't speak English but we still communicated.
