Harvest of 'Ambo' Potatoes

Ambo is a white potato with pink colouring and it has a creamy texture when boiled. The seed potatoes were 'chitted' for about a month at room temperature in an outdoor greenhouse, meaning they were left to pre sprout and grow their first leaves, before being planted in 30cm coconut coir containers around 4-5 inches deep and then covered with soil. These grew for slightly over 3 months (they can be grown for longer for larger potatoes) and are now harvested.
