I've been trying this winter to bake bread again after 40 years, but I lost my old recipe, and it's not turning out very well so far.
Bread makers are great. 1and 3/4 tsp yeast, 540 grs stone ground wholemeal, 1 oz of butter, or similar, 2tsp sugar, 1 and 1/2 tsp salt, 400 cc of water, switch it on, 3 hours later delicious bread.
There is a hole in the bottom from the paddle, but it does all that kneading and proving stuff for you. There is a whole recipe book goes with it, everything from cakes to crumpets and baguettes, but just good bread with no 'improvers' or other additives makes it worthwhile.

Forty years ago I used to make all our family's bread. I had a recipe from a cookbook that included milk. I have no problem with proofing the yeast or kneading the dough by hand. I still remember the smell of baking bread. It is one of the most delicious scents in the world.

I've tried two recipes from the Internet but there's no scent as the bread bakes and not much flavor either. The recipes are all gimmicky, not just plain old down to earth bread.

I don't know what has changed or if I'm doing something wrong. I can't remember the exact proportions of my old recipe and I lost the cookbook decades ago. Maybe the flour is different now. I've avoided wheat for years due to health problems. Just wanted to smell that baking bread scent again.

That's how I know the bread maker is nearly finished :)

I don't own a computer, and I don't think I can highlight partial segments with my phone, though I could be wrong. I'm severely technologically challenged, lol.☺️
