I just planted rhubarb over the summer but I do not know how to winterize it. I know I have to mulch it but what do I do with the stalks and leaves? Do I cut them off or do I let them wilt off?

Whilst they are alive, they feed the crown.
Let them die off, and let them rot down in situ.
