Do you sanitize your jars before canning or just wash them? it seems like the canning itself would sanitize the jars

Yes, it seems that way to me also but my wife who does most all the canning here insists on sanitizing the jars first. Doesn't hurt and probably provides a layer of insurance.

that is funny, My wife and I can together and she is the one that makes us sanitize. my argument has been that nothing in our kitchen is sanitized

Keep in mind that canning is a very old thing. Older than indoor plumbing and other modern convenience. Many recommended practices date to times when water came from open wells or streams. Soap was scarce etc.

There was a time when bathing was thought to be unhealthy.
