It's nice the way Parsnips have such a long harvest season from Fall through Winter, to the beginning of spring.
Do you leave some plants to flower and go to seed?

For those interested in ornamental-edible gardens, second-year Parsnips (Pastinaca sativa) are beautiful, robust herbs with many attractive umbels of yellow flowers, in late Spring to early Summer. This robust, biennial in the Umbellifer Family (Apiaceae), originally native to Europe, Siberia, and central Asia, is also good polliator plants and alarval food source for various Swallowtail Butterflies (Papilio spp.)
