How early do you start planting

I was wondering how early you start planting your garden. I live in a pretty cold climate but planted spinach last year in the middle of February, it froze and snowed a lot after I had planted it and I still got a huge crop of delicious spinach. I would like to know what else is this cold hardy. I loved the fact that I got 3 good crops of spinach but would love to know what else I could get and how early I could do it.
