How do I make hard cider?

Autumn is coming, and they will be selling cider soon. :love:

Years ago, a woman I worked for explained to me how to make hard cider out of regular cider. All I really remember is that she told me to get the one that did not need refrigerated. (Unpasteurised? :unsure:) I also remember she said to put it in a closet, and the longer you wait, the stronger it will be. (y)

Obviously, I am forgetting a few steps! :oops: :rolleyes:

I would like to try it this year, can anyone tell me the missing steps?

To make Cider brandy (ie Apple Jack) all you need to do is to allow the cider to freeze. Alcohol has a lower freezing temperature than water so when the cider goes solid, the liquid left is pure alcohol. That is how they make Calvados.

Brewing is a good skill set to have. Hard cider would be the same process as making beer or wine. Beer being grains and wine being everything not grain. 100's of videos. Even more brewing supply places.

Tried to make it once with bread yeast. DO NOT do that it will taste nasty.

Post up your effort will be interesting.

Cider I make is more an apple wine, about 15%

2 litres of apple juice, 1 kg of unrefined sugar, topped up to 5 litres with water :)
