Perhaps Durgan or someone here on the forums can help me. Some of my garlic is forming scapes, and I've read about their culinary use, but no one goes into details.
Do I use both the stem and little bulb at the top? How do you prepare scapes? What kind of dishes do you use them in?

The scape is, as far as I know, just the stem, although it's all edible.
The flavour is mild, and the stems are quite tender.
I like them finely chopped then added to a pan of drained boiled potatoes, with a little butter and swirled round the pan over a gentle heat, until the butter just starts to sizzle.
Serve with grilled lamb chops and broccoli.

Now I leave them on since I don't find them particularly pleasant to eat. I found the cloves at harvest are larger if the scapes are left on. I am just finishing up this week the 2016 harvest.
But if you want to eat scapes do as headfullofbees suggests.
