Any tree that does not drop leafs during winter in the south and stays at round 5-6 feet tall?

Is there any tree that does not drop leafs during winter in North Florida (Jacksonville, FL) and does not get too tall? max height of around 6 feet?

The bottle brush tree is something I was interested in, but it gets too tall for my small yard.

It sounds like you're looking for medium-sized shrubs rather than trees. Most of the ideas on that link are conifers that won't do very well where you are; it's a little too warm and moist. You might try:
Dwarf Yaupon Holly
Abelia
Rhaphiolepis - Majestic Beauty pushes the height limit but there are others
Wax Myrtle
Texas Privet - can be weedy-ish
