Big secret so don't tell anyone, but Epsom salts sprinkled around the plant works wonders for me.
I, too am a big believer in the horticulture use of epsom salts.
More is becoming known about the benefits of sulphur in the garden, not just for lowering pH or fighting fungus.

How big a secret if I know & I'm an ocean away? lol.

My only addition would be that you can limit the size of chilli plants by limiting the size of the pots.

Not too much water. Use tomato feed when the flowers come. If you want to create hotter pods, starve them of water a little when the fruits come.

You have 'A number' on the go, it is easy to grow more than you need. Of course if you have the room that's fine, you just give everyone a few chilies and make yourself popular.
Like people have said, not too much water, I sometimes wait until the leaves start to droop a bit.
