What could be eating my spearmint??

When its random, the insect is mobile. I get beetle that looks like that. Try some spinosad or pyrethrin

My guess would be those little round snails. Use SluggoPlus to kill them.

I am perplexed and tired of this.

That very same thing was happening to my mint. Not seeing anything obvious, but occasionally spotting tiny white flies, I deduced that they may be the culprits. I used some insecticidal soap, Safer, and it helped. Good luck.
