Should I plant them now, even though it’s winter, or should I wait until April or so and just store them for now? I’m a bit confused about how they die off each year and what I’m supposed to do during their dormancy period.

Caladium bicolor tubers should be let to go dormant in Winter. Store unplanted or dug-up tubers in a dark, cool place indoors until Spring planting time. Storing them in dry potting soil over Winter is a good way to go.
