Things may be a bit different here, I am in the South of England, but I let mine die down , then give them about six weeks of cold before replanting. by cold I mean a bit under 10 degrees. I leave mine in the cold greenhouse, but I know some people put them in the veg tray in the bottom of the fridge. If you do that beware, they can't take close association with apples, I don't know why, but I am told it leaves them 'sterile'. I am not sure what is meant by that, whether they simply don't bloom or actually die, but either is not going to be good. They start to put up a flower spike pretty soon after planting if it is warm enough.
