Lunch and supper

I've been loving beets this year, I grew 6 different verities. I usually bake them, then soak them in vinigar/water/honey for a few days. The smaller ones I eat with salt and pepper. From lest to right I picked some Detroit Red, bulls blood, and the smaller ones are a chioggia and golden beets. What is your favorite beet?

Also picked a zucchini to fry up in the air fryer and some Parisian carrots and Brandywine tomatoes to snack on.

I've been trying to stick to fruits and veggies from the garden 3 days a week without meat. So I eat a lot during those 3 days lol. It's all yummy but doesn't hold my hunger for long unlike meat.. so I'm eating every few hours. I've been stealing a lot of potatoes too lol, little golf balls. But as far as beets, the bulls blood in water/vinegar/honey are hard to beat! Pardon the pun lol.

Favorite beet: Without doubt the Detroit Red. I grow several pounds every winter. My wife makes a pickled beet that she eats very often...and I eat occasionally. They grow here all winter without any problems.

The tops are really good also when young.

That's what I do with the large ones, vinigar, water and honey. But I don't bother preserving them in jars, they don't last long enough to bother lol. I just use Tupperware and let them soak up for a few days.. I eat them almost every day for a snack.

Some bulls blood and Detroit red I've been pickling for about a week. They are ready to eat, I keep three containers in the fridge I make every few days.. making a new batch today.

Your garden haul sounds amazing! I love how many varieties of beets you’re growing! I usually lean toward golden beets since they’re a bit milder, but chioggia are fun too with those stripes. I get what you mean about veggies not holding you over as much as meat, but it’s worth it for the flavor. When I can’t grow enough, I’ve called the amazonfresh customer service. They have always been really responsive.

don't have a favorite beet. whatever in the store. sometime I will just grate then raw for salads. sometime will simmer them soft, reduce the liquid and use the liquid for food coloring. I also puree beets and make Chocolate beet cake. And eating beets get my urine pink. awesome.
