My lime tree is bearing fruit but in the last few weeks the leaves are curling. I water about once a week.

You're in the southern hemisphere like me. It does look like a lack of water. So, give it a long (30 minutes) slow soaking instead of regular watering.
Apart from that see if ants are climbing up the trunk, and if so, see what creature they are milking and spray it with pest oil (1:10 detergent to vegetable oil).
Prune it each year to keep the center clear. Remove all inward growing branches and all crossing over branches.
If you haven't fertilized it recently put a 2" (50mm) topping of compost under the canopy.
