We have turned out great wines with various fruits but the last batch has turned sour. Cherry wine is one among the best wines we have prepared but this batch has turned sour. Is there a way to 'repair' it?

I may boil it as even cherries are boiled unlike other fruits. When I was making wine the sourness had disappeared after I boiled the cherries. May be a further boil might help. Let me see.If I were you I'd take option 3 and do a reduction, then use it for whenever you need to make a broth or something like that. I cook a lot with white, red and dry sherry wineThey give such a good taste to most foods.
