I decided to make spaghetti sauce today. Its been about 6 years since I made this recipe.
Pick 1 gallon ripe tomatoes keep them in kitchen window to get riper 2 or 3 days to lower acid and have better tomato flavor. Put whole tomatoes in boiling water 1 by 1 for a few seconds so skins peals off easy. When finished pour out hot water use pot to cook 1 gallon of sauce. Cut tomatoes in half to remove seeds and juice and core. Cook tomatoes on medium heat and stir well often to boil away water to the thickness you like best. Puree sauce in blender.
Put about 2 tablespoons of oil in a hot skillet. Add 15 chopped garlic, 1 medium onion chopped, 8 basil leaves, 1 T oregano, 2 tsp salt, 1 tsp red pepper, 1 T sugar, 1/4 tsp black pepper. Pour 1 cup of the tomato sauce into blender, puree cooked herbs and sauce together in blender then add this to the 1 gallon of sauce. Stir well.
Pour into pint jars for canning or freeze in 8 pint zip lock bags.
