French fingerling are the easiest potatoes I have grown. Each eye grows 1 lb. of new potatoes. White potatoes have a butter flavor. Wife throws the smallest ones in stew & soup they don't need to be pealed. Dice and slice scrambled fried potatoes with a little onion are very good. Pealing is so thin we never peal them. Each seed potatoes grows about 20 to 25 more potatoes. I sometimes cook French Crisp with them and hash browns.

I planted seed potatoes 3" apart March 1st with 6-12-12 fertilizer. Cover with 3" of soil so they don't freeze, our first frost is April 20. When tops are 6" tall hill soil up 3". Keeping hilling them up so tops are always 6" tall. 10" tall hills are tall enough. I bought 5 lbs of seed potatoes a year ago and grew about 50 lbs of potatoes. New potatoes June 1st don't stay doormat very long eyes started sprouting Aug 1st I planted 90 potatoes Sept 4 then harvest 10 gallons = about 60 lbs. the other day Dec 26. Two crops of potatoes we have too many I gave away 5 lbs and plan to sell a few on ebay in those Flat Rate boxes that have a fixed price of about $7. I harvested 341 lbs. new potatoes June 1st, plus I harvested 60 lbs. more fingerlings 2 days ago. Seed potatoes in the shed thermometer says 40° inside.

Sounds like your wife has tastes similar to mine...mine likes the white potatoes best. But she also really, really likes the Sarpo Mira I grow.

Me, I like them all, as long as I grow them. :) :)
