Suggestions on indoor setup (beginner)

Hey all,
I've just begun indoor growing of vegetables. Quite a few issues I've already run into, but here is what I got so far.
Some things I've noticed: plants grow, laying on soil, instead of growing upwards. I've bought more LED light strips so instead of 1 bar, there will be 3 bars per level. Also, I've noticed mold in one of the containers, on the soil. Lastly, I am going to need more vertical space for these plants. I'd appreciate any recommendations and advice.

Much of my advice would be what you have already said concerning more light and more space.
The mold on the soil may or may not be an issue of concern, depending on type and abundance.
Growing sideways on soil is etiolation from too little light. Either the stem is too weak to support the plant, or similarly the plant is actively bending sideways for more light exposure.
