Newbie to the forum

Hello,
I am a sometime gardener and incipient retiree. I seek to become a more dedicated gardener with better outcomes. My first priority is growing tomatoes. I live in Omaha, NE and used to get great tomatoes with little effort. Now, not so much. First issue: my wife likes large, beefeater type tomatoes. What is the best way to procure a good seed line? I plan to start them indoor, and seek information resources on when and how to do so, when to transplant, and how to prune (if that is a good thing?!). Thank you in advance for any information or resources.

I'm in Missouri and did a little trial of twenty or so varieties and I'm not really happy with any of them compared to the paste tomato we developed, but if i had to give recommendations

Cherokee purple was alright
Aunt rubys German green
Wychee yellow

I'm going to try @smitty55 tomato next year i hope

You gotta baby the big tomatoes a lot more, that means staking, watering even thinning the branches

I am reminded, how did the Black Russian do for you? Does your climate help or hinder a Russian/English tomato I wonder?

It did very well. I was surprised particularly at the resilience of the plant to this climate. It produced well into the hot zone. Only downside was wife didn't like the tomato color...oh well.
