Mystery substance on avocado plant

This has been growing about as long as the roots so I thought it was the roots but it’s definitely not, right? I asked another friend who was super into plants and she didn’t know.

My avocado has been gestationing for about 3 months now. I change the water daily or every other day if I forget.
