I bought me first lettuce plant yesterday and transplanted it in a different container. The leaves on the outer edge were small and touching the dirt, so I snipped it off and ate it (after washing) and it was really bitter. The lettuce has NOT bolted. It's a very young plant. Is it normal?

Not normal but not unheard of. Let your lettuce grow as this is the perfect time for it to grow. In my experience growing from seed is the best option. It will take about 55 days. Are your transplants leaf, bibb or head lettuce.
