As for orange peels, no, I don't boil them. Should I do it? I thought that washing them is enough. I use Polish gluten-free dark chocolate. I'm gluten-intolerant, so I don't have much choice.

All the recipes for candied peel involve boiling them, changing the water, and doing it again. Of course you can save the water for simple syrup in between batches, but it just seemed a little to labor intensive for me for now. I'd have to set aside an entire to do it, and do a lot of peels at once to make it worth the time.
