How to harvest?

Hi all, so I have a pretty hefty pot of what I believe to be mixed greens variety. Just some silly Home Depot type lettuce buy. Regardless how do I harvest this? Do I simply just cut all of these at the base and let them all grow back? Seems to be what my dear friend google tells me. But I’ll “leaf” it up to you. See what I did there

Not quite at the base usually seems to work for me, though I have had the occasional one that didn't grow back.
