I've been just putting blocks in a Tray but where my pads and all are they are head high.

When I go to put the Tray up some of the blocks fall over.

It is really hard with one hand.

Make the trays just wide enough for the blocker to fit in and a multiple of the blocker long so the blocks fill the whole area. Put 4 sides on the tray for the blocks. Use something like flat tongs to pick up the first block or two.

I have several trays for my soil blocks and all have 3/4" thick walls on all 4 sides and either 1/4" ply or aluminium trim coil (sheet metal) as the base.

If they have soil and moisture those seeds just want to grow, it is amazing what you can use. A lot of mine start life in sectioned plastic trays that things like biscuits came in, or in yoghurt pots. Beans go in cardboard tubes stood up in margarine tubs.
