Twenty eight liters of garden vegetables were processed into juice and pressure canned at 15 PSI for 15 minutes for long term storage for use in the off season. Process was to cook, beat into a slurry, food mill strain, Champion juicer strain, pour into liter jars and pressure can. The ingredients were garlic, onions,collards, carrots, beets, celery, basil, kale, dill. All from the garden.Pictures depict the process.

I thought the same thing. You eat so healthy, Durgan. It's great:) I gave up gluten, sweets and fast food, but I don't eat as many vegetables as I should.

The national food guides emphasize vegetables. After much reflection and experimentation juicing was my practical effort to meet the vegetable criteria.It took some effort to break with tradition and habit as to what we eat.

I was never a fast food person, but liked my sugar which I have completely removed from my diet. I don't bring it into the house in any form except for a it of molasses mostly for the bit of iron in it, since I eat almost no meat..

Many of my growing-up years were vegetarian (hippy-commune parents) and while I do eat meat and fast food now it's just a few times a week. Mostly I do home cooked, vegetarian or salads and stuff from the Middle Eastern deli. And always tons of legumes and vegetables. I always joked that the reason I could "get away" with eating things such as an entire pint of Ben & Jerry's icecream without gaining an ounce was because I ate such a high-fiber diet that bad calories just go right on through without settling anywhere.

And as I get older I realised that eating sugary or high-carb foods were giving me sugar highs and crashes and by drastically reducing those I have more energy. I bought myself a doughnut last week for the first time in, literally, years and couldn't finish it - too sweet! :sick:

I didn't know molasses contains iron. Thank you for the information! I'll start using it too. I haven't eaten meat in over 20 years;)

I need to start drinking more vegetable juice. I have gained weight and just feel like putting my body through a cleansing. I mean in making vegetable juices, a person can get all the nutrients that they need in one. I purchased them before from the grocery store but find that this can become expensive. I can't wait to get back to juicing as the health benefits are great.

There are many good reasons to drink vegetable juice, but I wouldn't imagine weight-loss was one of them, unless you can swap it for much higher calorie drinks, as you'll get calories without satiety.
Eating more veg (especially home grown) means you'll get the goodness and the flavour and hopefully some satiety too.
I speak as someone who has trimmed 23lb since New Year.
