We've had a couple nights of freezes but not all my cabbage heads are tight.
Should I hold off or pick?

Cabbage can stand at least 28F so if you are going to have more warm weather ahead you may want to hold on. They might grow enough to tighten the head.

I would hold off until a really hard freeze is imminent. I have had mature cabbage survive temps down to the lower twenties deg F. Watering thoroughly prior to freeze is a good protection.

These two early wakefield are my first to harvest this season and survived one frost thus far.
