Maybe anyone knows some construction/solution for a large compost pile (cold leaf compost in our case), so that I can harvest the part of the pile that is (more) ripe while leaving not yet ripe part(from the last season), in other words how to dig out (more) mature part from bottow/below layers while leaving the upper part sit?. One solution is obviously 2 or more compost piles each year new pile. But maybe there is a solution of single pile of 2-3 years?

Depends how much leaves you have and a hidden corner. You can fill up plastic bags with with leaves tie them up and leave them for a couple of years.
