Sweet potatoes

How do you know when they are ready? I tried these on a whim and they seem to be doing well, but I have no idea how to tell when they are ready for harvest?! What should I be looking for?

My criteria is dig one up and if large enough it is ready. The vegetation size is not informative. I do not let them suffer a frost.

I pick mine at about 4 months after transplanting and when the plants start to turn yellow. But you can pick at about any time just as long as the tubers are large enough. I guess it's better to pick too early than too late because the tubers can get quite large.
