My neighbors have given us tons of rhubarb and I am getting tired of making rhubarb pies, strawberry-rhubarb pies, rhubarb crisps, etc. WHAT ELSE CAN I MAKE WITH RHUBARB?! Help! I want to do something unique!

Rhubarb and Ginger Jam is wonderful, and would certainly use up a lot! Never tried making it from scratch myself though.

My two favourite rhubarb recipes are these below. The muffins freeze really well, and as muffins go they are relatively low calorie!

Rhubarb pie, wine and muffins are my favorites. The custard cake sounds good Becky, I will have to try that one out.

I love to do the strawberry rhubarb mix and put it over vanilla ice cream. Yum!! Of course, rhubarb pie is one of my favorites and I have always wanted to try making strawberry rhubarb jam. And here is an interesting sauce:

rhubarb compote

3 tablespoons balsamic vinegar
2/3 cup sugar
3/4 teaspoon grated peeled fresh ginger root
2 fresh rhubarb stalks, leaves discarded, ends trimmed,
and stalks cut crosswise into 1/4-inch-thick
slices, or 2 cups frozen sliced rhubarb, thawed, reserving liquid
Procedure:
Mix.

Makes about 2 cups

I like this with pork.

We used to have rhubarb in our garden when I was a child, and the two things I remember my mother making frequently were rhubarb jam and rhubarb crumble. We would have the crumble for desert at sunday lunch. It was delicious served warm with a bit of custard.
