What products are considered to be pesticides? What is the risk of exposure and how we can reduce them?

All pesticides today come with a little pamphlet attached to the container. It lists all the government mandated information to help you use it properly. You can also go to a manufacturers site and get the information. If I was going to be handling pesticides on a daily basis I would study up until I became an expert.
