growing parsnip

I just love parsnip, especially roasted in the oven, and I would love to grow my own parsnips :) I have never done it before and could use some advice. I know that I need to sow in spring and harvest in autumn, but that's about all :)
Do they have the same problems as carrots? How can you prevent carrot fly? Is there anything that I should plant next to my parsnips?

I started some in spring 2014 and thought I had only gotten leaves. The next spring the area looked to have weeds growing but wait, weeds don't grow in a straight row! Left them in until they got to a chunky size. Certainly shocked me to have success!

An eight foot row of ALL American parsnips was planted using the board method.Seed was saved from 2011/2012 crop. Apparently parsnip seed has to be fresh to germinate, probably meaning one year old.The seed was covered lightly with soil and watered lightly. The raised board will be removed when germination occurs. Spacing of seeds was about three inches.Parsnips are difficult to germinate for various reasons. The board method seems to be about the best method in my experience.

These parsnips are almost carrot-like at this stage of their growth.There is still several months growth before they mature. Some parsnips can get the size of a turnip at their large end and still be of a good eating texture, not woody.

Parsnips germinated. Upon removing the board to replant the seeds, it was found the seeds had germinated in about 18 days.Lucky me.

The last of my parsnips was cooked today. This most pleasant vegetable in not often utilized, and I suspect from not cooking in a palatable form.
Method of cooking: Wash, cut into longitudinal pieces fairly thick,steam cook for about five minutes (watch closely since it cooks quickly). After cooking place on a butter greased oven pan, swipe the parsnip slices with butter and sprinkle a small amount of brown sugar, place under broiler and brown slightly. Serve.
The broiling tends to reduce the liquid and toast the parsnips. It makes for a most attractive dish, which even children will like. Any leftovers can be stored in the refrigerator and nuked for later meals. Parsnips make a good substitute for potatoes.

This is one vegetable that we don't use in our family for some reasons, but with @Durgan 's dish, it looks so good that I would want to try soon!

Thanks for the tips, that recipe looks nice, I have uses parsnips myself as a substitute for potatoes :)
