I recently put in some small citrus trees. They have blossomed and are starting to put on fruit. Should I pinch it off and allow the trees to grow some more? I am afraid the branches will not bear the weight.

Please post pics. It would be good to see the number of fruit and the thickness of the branches. You might need to thin the fruit, but if the branches will bend instead of break, it might be a good way to train the branches outwards.

There is no reason to pinch off the blossoms. The tree itself will drop off blossoms/fruit where it cannot be supported. Make sure to water infrequently and deeply.
