Five of eight Brusels Sprouts were made into 7 liters of pressure canned juice at 15 PSI for 15 minutes. The type of plant was a hybrid called Jade Cross. Often they are perfect. This batch was less than perfect making processing tedious. There is no liquid in Brussels Sprouts so more water than is normal has to be added when making the slurry. The final product is satisfactory.

As you harvest brussels, I'm preparing my seed beds for fall planting the brussels. I also use the jade cross but prefer to eat them fresh lightly steamed with butter and parmesan...excellent.

I like the same way. But my growing is only a few months so I have to preserve. Nothing grows in Canada off season.
