I’m sitting here wondering what I did wrong because my Roma’s are starting to become ripe and I decided to can some whole ones since I love whole canned Roma tomatoes from the grocery store. Well once I blanched the skins off I noticed they had a mushy texture and such a light color, nothing like the delish sweet grocery store canned ones that have a deep red. The taste was pretty weak. Even eating these tomatoes fresh before I blanched them, they had also like a starchy texture. Maybe it is the type of Roma I grew or something is wrong with them. But it’s driving me crazy since I’ve been so excited about my first home grown crop.
