Salsify (Black Root) Scorzonera

I like to try new things to grow and eat from the garden. This is a long days to maturity (120) cool season plant. It is reported to have the taste of oysters and mild asparagus. I love oysters and a new challenge so going to give it a try...planting in HK container tomorrow.

Anyone have experience with this plant and willing to share?

No experience but i ordered seeds like a couple days before you posted

There's also a white salsify that's a different genus but supposedly similar

I'm trying all the weird roots after success with burdock

Skirret is on the to do list

Is it your intent to start this fall or wait to start them in spring?

They would never make it here in summer so I'm going to treat them like growing celery through the winter.
