Almost any culinary sage (salvia officinalis) is easy to grow. Just don't fertilize (results in great growth and little flavor) and don't over water (it is a Mediterranean plant and likes a well-drained, somewhat dry soil).
It is also very easy to grow from seed. I currently have three sage plants in 8" pots that I grew from seed last year. Two will go into the ground, and the other will go to a gardening friend. Here in Texas I've found that sage dies out after about five years, so that is why I'm replenishing my sage. You may have better luck in N.C. keeping it longer.
