Plant new vegetables or cut back old???

Hello! I am wondering if I should plant new seed or, if I cut back the old plants, they will come back with tasty leaves again?

kale
bok choy
arugula

I have limited space, so can't experiment to see which method is best.

Bok choy grows so quickly, replace it's a no-brainer.
Arugula, I'm not competent to answer.
Kale: it grows quite slowly, BUT IMV plants that you have to cut back are never as good as young, tender ones, so I'd be tempted to cut what you have right back, use what you can, & grow fresh.

I pulled all the bok choy yesterday.
I cut back one kale plant & will order seeds for fall planting.
I pulled some arugula & left a few remaining stalks that had bolted. There are still some very hot, spicy leaves on them that I still enjoy in a salad. Will replant for the fall.
