Capsicum Stem Rot

I'm wondering how this can be avoided when I trim back the capsicum plants for over wintering? I clean my tools and am careful not to get water on the plant, but is there anything else I can do like honey on the fresh cuts?

I also have some lower down on the plant and wondered if I cut them off and sealed it would it save the plant?
