Am moving to new house in the spring. Can I burlap 2-3 yr old trees now and heel them in through winter? Am in zone 5.

That'd be quite risky !! I wouldn't try it as they would lack light for photosynthesis, be kind of awkward, if I understand you correctly, to heel them in for months then replant somewhere else and expect them to survive. Cheaper to buy new 2year old trees and plant them in your new place, leave the old ones where they are.
