A purple cabbage,half he cabbage, was dehydrated in the Excalibur dehydrator for about 10 hours at 125F. To reduce brittle dried pieces from flying a plastic container was incorporated to facilitate scraping the dried slurry off the drying pans. Pictures depict the process.
