They changed our planting zone because it has been warmer to 6b.

Did some more reading it might frost after April 20 because of our elevation.

I know last year everything was looking good then had a frost in May.

Then everything felt like I should plant but started cooling down.

I'm to the point if it's looking good plant.

Plant a few at a time once a fortnight from the beginning of March through to the end of May. The first ones will probably not make it, but if you are lucky you will get a well early crop, April ones will probably make it, if you have way too many take out all but the best beginning of June. It works if you are starting with seed, it is so cheap, for bought as small plants use containers you can bring inside, or mulch heavily and buy a few yards of net curtain to cover them if it looks like freezing.
Have you ever considered hot beds? Basically a bed on top of a lot of rotting stuff that will produce a bit of heat. They used to grow pineapples in England in the 1800's using that and a bit of glass.
Know the shape of your land, areas protected by hedges that never get as cold, bottoms of hills where all the cold air flows down and collects on cold nights, that sort of thing, it isn't the same temp. everywhere, unless it's dead flat and open.

Don't base you life and garden around those worthless numbers we are in zone 8a now not 7a. All I really need to know is our LAST frost is usually April 20 and our FIRST frost is usually Nov 1 but that can be plus or minus 5 to 20 days. Numbers are up down like a roller coaster, we sometimes have LAST frost April 1st or May 10. We sometimes have FIRST frost Oct 15 or Nov 20. We sometimes have 80 degree temperatures in Feb. Once we had 6" of hail in July. Your local TV weather report is more accurate than a crystal ball or Ouija board.

I get your confusion! Changing zones can be tricky. It's wise to check frost dates. Have you considered frost-resistant plants for this season?

Not sure how long you've been in MO but it does frost after April Fools often. 25 years along the western border from KC to Joplin, mainly in Springfield/Rogersville. Spent many Marches shoveling snow. Usually when trout season opens it's time to consider when to plant. I know I had my outdoor garden going in March and crossed my fingers. But every year the winters there change from mild to wild to I'm done with this $**T :)
