What's up with my bay tree?

I just didn't see this happening but one day I went out on my roof terrace and my bay tree had turned dry and copper. I was fairly sure I had watered it recently but I'm wondering if it was overwatered or underwatered.
Any opinions gratefully received

Only you can monitor your plants watering needs. Take a hand cultivator, dig down deep and feel the soil around the plant each time before watering. I assume you are in the ground and not in a container. If you take a photo of the whole plant it may be easier to tell whats happening.
