Garlic, hard neck white, is ready for conventional harvest, which I avoid. This year I will leave the bed until the bulbs start to flare or slightly break apart. I have found the cloves get much larger and store equally well as a closed bulb. My garlic is always superb and as large or larger as any that I have seen at garlic festivals. I cooked the fresh bulb in butter after crushing in the tortilla press and allowed to sit for at least 15 minutes to let the enzymes work as recommended before sautéed in a bit o butter at low heat. It makes a pleasant snack and the heat of the garlic is removed by the gentle cooking.
